Crescent Roll French Dips

Have a super busy day on the schedule? This meal is delish and ready in about 15 minutes!

Crescent Roll French Dips


What You Need:

Deli Sliced Roast Beef {I got 1 lb. and had a little left over}

Deli Sliced Provolone Cheese {I got 8 slices}

2 packs refrigerated crescent rolls


1 packet McCormick’s Au Jus Gracy Mix

Fix it Fast

1. Unroll crescent rolls. Place once slice of roast beef and half a slice of cheese in each roll.

2. For adults spread a dab of horseradish inside of each roll. Omit horseradish for children’s rolls.

3. Roll up into crescent shape.


4. Bake at 350 for 11-15 minutes or until rolls are slightly golden.

5. While rolls are baking, make Au Jus sauce according to package.


{I almost didn’t consider this recipe because I wasn’t sure how to make the sauce, but for a little over $1.00 the sauce was made from this easy mix!}

Serve with fries or veggie of choice!

What We Love Right Now September 19, 2012: Quick & Easy Asian Beef

We love Asian inspired meals at our house so when we tried a variation of a Korean Beef recipe we found everyone was pleasantly surprised at the dinner table! This recipe is cheaper than the traditional recipe because it uses ground beef vs steak. It is simple and easy to whip up on a busy weeknight.

Quick & Easy Asian Beef


What You Need

1 lb. ground beef

1/2 cup brown sugar

1/4 cup soy sauce (I didn’t even measure, just used enough to cover meat thoroughly)

1 tablespoon sesame oil

2-3 cloves garlic, minced

1/2 teaspoon ginger, minced or grated

Crushed red pepper, to taste

Salt and pepper, to taste

1 small bunch green onions, chopped

Fix it Fast

1. In a large skillet heat sesame oil and brown ground beef along with garlic.

2. Drain fat and add brown sugar, soy sauce, ginger, and crushed red pepper. Note: I added sugar and soy sauce first and set a small batch aside for the kids, then added ginger and pepper to rest of beef for the adults.

3. Simmer for a few extra minutes to blend flavors.

4. Top with green onions (don’t skip this–adds lots of flavor!)

Serve over rice and serve with mixed veggies or steamed broccoli.

This meal was packed with great taste and perfect for an easy 15 minute weeknight meal!

What We Love Right Now September 12, 2012: Picnics in the Park

basketSummer is ending and cooler weather is on the way! It’s a great time of year to enjoy the outdoors. Almost all kids I know love visits to the park and great way to enjoy your outdoor time while there is with a picnic. You don’t have to do anything too elaborate, but sometimes it’s hard to keep it healthy and simple.

For Vegetarians…

Pack your basket full of fixing for veggie sandwiches. You’ll need whole wheat bread (or pita bread), some of your favorite veggies-thinly sliced, and a spread (think bean dip or hummus). Your kids can stack and make their own sandwiches! Fresh fruits are always easy to pack (think about making fruit kebabs)  and so are some whole grain crackers. For dessert think grains as well: oatmeal cookies, brownies made with whole grain flour, etc.

For Meat-Lovers…

My kids get so tired of sandwiches. I think it must be all the bread. They’d much rather have their meat rolled up with cheese. Again, easy to pack in your picnic basket in a small cooler on ice. For extras consider baked beans or trail mix.

If you don’t have time for a weekend or daytime picnic you could always swing by after school and pack a quick snack for everyone to enjoy!
