Perfect Mini Meatloaves

For some reason me and meatloaf in a traditional pan just don’t mix. I can never seem to get it right. I’ll admit, I’m not a huge meatloaf fan, but my kids are and when I came across this mini meatloaf recipe I thought I would give it a try. It does require a little extra work as compared to traditional meatloaf, but these little things are tasty and just right the right portion for everyone!

Perfect Mini Meatloaves

What You’ll Need

Loaves:

16 saltine crackers, crushed finely
1/4 cup whole milk
1/3 cup minced fresh parsley {I used a couple of shakes of parsley off my spice rack}
3 tablespoons Worcestershire sauce
1 egg
1 1/2 tablespoons Dijon mustard
1 half small onion, diced
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1 lb. lean ground beef
2 teaspoons oil {I used olive oil, but you could use canola oil}

Glaze:

3 tablespoons Ketchup
2tablespoons Brown Sugar

Fix it Fast

1. In a large bowl mix crackers, salt, pepper, onion, garlic powder, egg, Worcestershire sauce, and mustard.

2. Add ground beef to bowl. Mix well with hands until meat and all other ingredients are blended well together.

3. Form meat mixture into small oval shaped patties. With 1 lb. of meat I was able to make 5 good sized patties. Set patties aside on plate/dish. Preheat oven to 425 degrees.

4. Heat large skillet on medium/high heat. Add oil to skillet and brown each patty about 3 minutes per side.

5. Once browned, place patties on foil-lined baking dish.

6. In a small bowl mix ketchup and brown sugar. Top each patty with glaze.

7. Bake patties at 425 for 20-25 minutes.
