Simple Mexican Casserole Recipe

If your family loves Mexican cuisine then this casserole is a must serve!


What You Need

1 lb ground beef

1 pack taco seasoning mix

1 can refried beans

1 15 oz jar of salsa

1 small green bell pepper, diced

1 small bunch green onion, diced

1 small can sliced black olives

1 bag shredded mexi blend cheese

1 bag tortilla chips

1 cup shredded lettuce

1 small tomato, diced (optional)

Fix it Fast

1. In a large skillet, brown ground beef and drain.

2. Add refried beans, salsa, and taco seasoning to beef. Bring to a boil, then simmer for about 7 minutes.

3. Crush about one cup of chips and add to  a 2-quart baking dish as first layer.

4. When beef mixture has simmered, pour on top of chips.

5. Sprinkle bell peppers, onion, olives, and cheese on top of mixture. Then bake at 350 for 20-30 minutes, or until cheese is bubbly.

6. Top with lettuce, tomato, and a few more crushed chips.

We served this with spanish rice and corn bread. The whole meal was very flavorful!
