Unstuffed Pepper Bake

Spring is around the corner and it always reminds me of fresh foods-veggies, fruits, and crisp salads. If you love peppers and are a fan of the traditional stuffed pepper, then this recipe is for you! It take the stuffed pepper and reverses it using yummy tri-colored peppers!

Unstuffed Pepper Bake {variation of Kroger recipe}

What You’ll Need

1lb Ground Beef
1/3 cup Chopped Onion
1 1/2 cups Tri Color Peppers, diced {if you shop at Kroger these peppers come in a pack of three-red, yellow, orange}
2 garlic cloves, minced or 1/2 tsp  Garlic Powder
1/2 tsp Salt
1/4 tsp Ground Black Pepper
14.5oz can Petite Diced Tomatoes, drained
1 1/2 cups  White or Brown Rice
1tsp Worcestershire sauce
1tsp Italian Seasoning
8oz pkg Shredded Sharp Cheddar Cheese
15oz can Tomato Sauce
Fix it Fast
1. Preheat over to 375.
2. In a large sauce pan over medium-high heat, saute ground beef and onions, green peppers and garlic for 10 minutes, or until beef  browns and vegetables are tender. Be sure to drain excess fat. Then sprinkle with salt and pepper.
3. Stir in the tomatoes, rice {remember, you are using the instant version so no need to precook}, Worcestershire sauce and Italian seasoning. Remove pan from heat and stir in 1 cup cheese.
4. Spread mixture in a 13×9 baking dish. Bake, uncovered for 20 min. or until bubbly.
This dish is so tasty! It makes a great side, but we’ve had it several times as a main dish. Also if you don’t have all three peppers on hand, we’ve used just green and red and it turns out just as well!
