Easy Beef Empanadas

Just tried these empanadas for dinner last week and they were a big hit! Easy to make and yummy too.

Easy Beef Empanadas

What You Need:

1 Package of Pilsbury Refrigerated Pie Crust

1 Package of Mexi-blend Shredded Cheese

1 Small Onion

1 lb. Lean Ground Beef

1 can (14 oz) Diced Tomatos with Green Chiles, drained

2 tsp Chili Powder

1 egg

Dash of Salt and Pepper

Fix it Fast

1. Heat oven to 400 degrees. Meanwhile, in a skillet brown meat. Drain excess fat and place cooked meat into a large bowl.

2. Chop onion and in a skillet cook 3-5 minutes or until tender.

3. In bowl mix beef, onion, tomatoes (drained well), chili powder, salt and pepper.

4. In a separate bowl, beat egg.

5. On a greased cookie sheet, unroll pie crusts. Spoon beef mixture onto half of each crust, leaving room around the edges. Top mixture with cheese.

6. Fold over other half of pie crust and press edges closed using your finger or a fork.

7. Spread beaten egg around edges and top of the pie shell. Cut 3-4 one inch slits on the top of each empanada.

8. Bake at 400 for 20-25 minutes or until golden brown.

9. Cut into wedges and serve!

We noticed that with 1 lb of beef there’s quite a lot of filling. You might want to to consider filling 4 pie crusts instead of 2.

If you use less than a lb. of meat to start, consider filling one shell with meat mixture and the other with only cheeses {we are going to try this next time!}.
